1) How do you cook your turkey? (feel free to elaborate)

I usually smoke one (came out this morning), and then SWMBO will bake one in the morning. Smoked is mostly for sammiches to feed the kids and kinfolks the day before as they show up; and it makes a kick@ss turkey salad.
……………………………………………………..
2) What do you do with the turkey neck?
Into stock pot for broth; which goes into stuffing and gravy. When it’s cooked, fish it out, skin it, and shred the meat off, which is chopped and put into the dressing.
…………………………………………………………
3) What do you do with the giblets?
Into stock pot for broth; which goes into stuffing and gravy. When it’s cooked, fish it out, chop it up, and put into the dressing and/or gravy. This is very important, as my brood considers turkey to be only marginally edible without dressing and gravy - - unless it’s on a sammich.
………………………………………………………………
4) What spices/marinade do you use?
No marinade. Butter it, salt & pepper inside & out.
……………………………………………………………………..
5) How long from freezer to table?
Usually buy ours fresh. Occasionally somebody bags a wild one.
……………………………………………………………………
6) How long does it take for your family to eat a whole turkey? (leftovers, etc)
Not sure. Divvy up leftovers and send home with the kids. We eat turkey, gravy & dressing for another day or two, and then run out of sammiches and turkey a la king in 2-3 days.

1) How do you cook your turkey? (feel free to elaborate)
Baked, Deep Fried, Stuffed/not stuffed, Crock Pot, Injected, etc
Baked in a bag (I know, lazy, but that is just tough I got more to do than get the bird ready)
2) What do you do with the turkey neck?
Stock pot
3) What do you do with the giblets?
stock pot
4) What spices/marinade do you use?
Rubbed down with lemon juice, olive oil, garlic, and thyme salt and pepper, just before roasting place a cut up apple and a citrus fruit inside and 3-4 cloves of garlic.
5) How long from freezer to table?
Well it has to thaw for two days in the fridge then it will take me 1 night for the rub down to take effect, then 3 hours in the oven
6) How long does it take for your family to eat a whole turkey? (leftovers, etc)
Depends on how many of us are together at the time. Usually a few meal worth.

Re: How do you cook your turkey?
1) How do you cook your turkey?
Baked, stuffed with oyster stuffing. Usually have to do an extra pan of the stuffing, too.
2) What do you do with the turkey neck?
3) What do you do with the giblets?
I've never had a good plan for these, so I'll toss 'em. If my mother-in-law is here, she usually takes them. No idea what she does with them. I may have to look into doing gravy with them, though.
4) What spices/marinade do you use?
From year to year, we trade off who has the main responsibility for the bird. Last one I did was rubbed down with softened butter/olive oil mix, and then sprinkled with Old Bay.
5) How long from freezer to table?
Couple days, including thawing
6) How long does it take for your family to eat a whole turkey? (leftovers, etc)
A few days to finish polishing off the turkey and ham. If we've had extended family over, we'll send some stuff home with them.

Re: How do you cook your turkey?
BTW, you don't cook the liver in the stock pot. But you can saute it with onions, garlic & celery, then whiz it up with some sour cream and brandy and make a pretty good pate' to hold off the kitchen raiders while the turkey's cooking.

Re: How do you cook your turkey?
We usually have seafood or something, none of us like turkey. This year the wife is making some kind of filet mignon.
This keeps us safe from turning into Islamozombies.

That's downright unumurcan! You're supposed to eat turkey come Thanksgiving whether you like it or not. Sort of like going to church on Easter Sunday. Are you sure they're gonna let you stay down here, boy?

Tomorrow will be roasted after a brine tonight. Stuffed only with aromatics like onions and apples. Convection oven makes it almost as good as deep fried and a lot less work. Though my next one will probably be fried , just easier with all the guests around.
2) What do you do with the turkey neck?
Roasted it today until it carmelized, and then put it into the stock pot for the turkey stock I made today. I deglazed the pan with some chicken broth and poured that into the stock pot too.
3) What do you do with the giblets?
Those were browned in the stock pot before I added broth , some veggies, the browned neck, and some bones left over from the last turkey I did. makes a rich stock that I use for the dressing and the gravy. Some drippings from the bird will get mixed into both the gravy and the stuffing during the cooking tomorrow.
I actually had extra giblets I used too, and a couple of chicken livers got the same treatment. Some people also like to put the giblets in the gravy but my wife doesnt like that so I dont do it.
4) What spices/marinade do you use?
top secret brine lol. includes allspice, salt, brown sugar , ginger ale. Afterwards we just pat it dry , and butter it and put the aromatics into the cavities.
5) How long from freezer to table?
We dont do a frozen turkey for Thanksgiving, usually a fresh one. When we do a frozen turkey , usually take it out and put it in the fridge at least 3 days before
6) How long does it take for your family to eat a whole turkey? (leftovers, etc)
Depends on who visits and how much leftovers they take with them. By ourselves just shy of a week.

Me, I just have a large family and a bunch of friends. I've never had to cook a turkey.

Ditto Mamabear's except it's stuffed w/ homemade cracker dressing, butter, black pepper and thyme on the outside.

Re: How do you cook your turkey?
I'm not Italian (eye-talian?) enough for the spaghetti dinner that most of them eat back home, and turkey just tastes...not that good.dorminWS wrote:That's downright unumurcan! We do go to Cat'lick(?) church on Easter sunday though.
Funny thing is I've met almost no one from here around here, almost everyone is from somewhere else, so there isn't much of a local culture as it were.
