Lemon Chess Pie

@ Rick ... you can create a member's recipe board and stick this in it. :letseat:


Lemon Chess Pie

preheat oven to 350F.
Combine in Blender -

6 eggs
1/4 cup melted margarine
zest from 1 lemon (1/2 tsp or more depending on how much twang you like)
1/2 cup lemon juice

Bump that a couple times then add

2 cups sugar
4 Tbsp cornstarch

Blend this for 5 minutes, then pour into favorite pie shell recipe. Bake at 350F for 40 minutes or until set and dark golden brown. Goes great after a full day of shooting. Bon appetit!

Glen that pie was indeed good. The pecan pie was good too. I forget who made that. I had 2 pieces with breakfast on Sunday. I looked for yours but it was long gone...

Thanks Glen :thumbsup: If anyone missed a lemon chess pie after we left Saturday night I may know where it went. :whistle: I didn't get as much as a bite of it. :roll:
