Check YouTube for Krav Maga ( Jew-Jitsu) videos on disarming assailants . My little brother could do this in his hey-day, when he was training in martial Arts but you have to be fast. He did it to me several times and I knew he was going to do it. A mugger expects compliance so there is a chance.
I was never fast enough so I think I'd just give up the wallet.

This.

Speed, surprise and violence of action. If your going to do it you need to commit yourself to it mentally and physically, expect to get shot also(though hopefully in a nonvital spot).

I cannot vouch for the entire military, but one of my friends who got back from the sandbox said "If you're gonna do something, kill the muthafracka. Don't play with him, or think you're dissuading him. Just take him out, and deal with the consequences."

Sound advice.

They say that under stress, you react as you've trained to react. No training, who knows what you'll do. So, training equals an improved chance of success.

Also, as noted, if you have a gun trained on you it is no longer a joke. If you go for the gun you other hand has to hurt them so bad they will not fight for control of the gun.

Can you jamb a finger, or thumb, into their eye so hard your finger gets into the brain? Can you hit them in the throat so hard you crush their throat and the die of suffocation? Can you pull that knife and cut them so bad they can't keep fighting over the gun? Can you pull your gun and shoot them to the ground so quickly they lose grip on the gun?

All things to consider. Whatever you do, it has to be so fast and so devastating that the fight is over before they know they are in a fight.

Just some things to think about.
